Gut Thrive Chicken Fajita Recipe: A Simple, Nourishing Meal for Busy Weeks
These Gut Thrive in 5 Chicken Fajitas are one of my favorite quick, flavorful meals to keep you nourished throughout the week. They’re vibrant, fresh, and packed with protein, fiber, and detox‑supportive vegetables—everything your body loves when you’re working on healing your gut and balancing your energy. Whether you enjoy them in cassava wraps or tucked into crisp romaine leaves, this recipe is satisfying, easy to prep, and perfect for meal planning.
Ingredients (Serves 4)
Wraps & Base
Cassava or coconut wraps (cassava wraps may be heated)
4–6 romaine lettuce leaves
1 medium avocado
Fresh Salsa
3 Roma tomatoes, peeled and chopped
2 tablespoons chopped onion
1 teaspoon minced garlic
2 tablespoons chopped cilantro
1/2 teaspoon salt
1 teaspoon lime juice
Chicken
3/4 pound boneless, skinless chicken breasts, cut into 1/2‑inch strips
1 teaspoon avocado or coconut oil
1/8 teaspoon chili powder
Pinch of cumin
Pinch of onion powder
Pinch of garlic powder
1/4–1/2 teaspoon salt
Pepper to taste
Vegetables
1 small red pepper, cut into 1/4‑inch strips
1 small onion, cut into 1/4‑inch strips
1 medium zucchini, cut into 1/4‑inch strips
2–3 teaspoons coconut oil
Salt and pepper to taste
Directions
Combine all salsa ingredients and store in the refrigerator to chill.
Wash and shred the romaine lettuce leaves; set aside.
Prepare all vegetable ingredients.
Cut chicken lengthwise into 1/2‑inch strips.
Place chicken in a baking dish and add oil and seasonings.
Coat chicken thoroughly and arrange in a single layer.
Bake at 350°F for 10 minutes.
Turn chicken and bake an additional 5 minutes, or until fully cooked.
While chicken cooks, sauté vegetables in coconut oil until tender.
Mash the avocado or slice it.
Fill wraps with chicken, sautéed vegetables, shredded lettuce, salsa, and avocado.
