Pumpkin Spice Energy Bites

These Pumpkin Spice Energy Bites are full of nourishing ingredients that support your gut and adrenal health. They're naturally sweetened, quick to prepare, and perfect for satisfying your sugar cravings!

Ingredients

  • 1 cup rolled oats (gluten-free, if needed)

  • 1/2 cup almond butter (or sunflower seed butter for nut-free)

  • 1/3 cup pure pumpkin puree

  • 1/4 cup raw honey or pure maple syrup

  • 1/2 cup unsweetened shredded coconut

  • 2 tablespoons ground flaxseed

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon pure vanilla extract

  • Pinch of sea salt

·       Optional: 2 tablespoons mini dark chocolate chips or cacao nibs

Instructions

1. In a large mixing bowl, combine the oats, shredded coconut, ground flaxseed, pumpkin pie spice, cinnamon, and a pinch of salt.

2. Add the almond butter, pumpkin puree, honey or maple syrup, and vanilla extract. Stir until well mixed. If the mixture feels too sticky, add a bit more oats; if too dry, add a little more pumpkin puree.

3. Fold in the chocolate chips or cacao nibs, if using.

4. With damp hands, roll the mixture into one-inch balls.

5.  Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to set.

6.  Store in an airtight container in the refrigerator for up to one week.
